​Fresh Heart of Palm Ceviche (Ecuadorian Style)

​Ingredients

​1 Can of Tropicalfoods Hearts of Palm (Whole or Pieces)
1/2 red onion, finely sliced ​​(lemon-pickled).
1 medium tomato, diced.
Juice of 4-5 fresh lemons (or limes).
1/2 bunch of fresh cilantro, chopped.
1 tbsp. olive oil, salt and pepper to taste.

​Preparation (Time: 10 min)

​In a bowl, place the hearts of palm, pickled onion, and tomato.
Add the lemon juice, olive oil, and cilantro.
Mix gently and season with salt and pepper.
Let it rest in the refrigerator for 10 minutes to allow the flavors to blend.
Serve cold, ideally with plantain chips or toasted corn.
